Seasoned with ketchup, Dijon mustard, tamari soy sauce, Parmesan cheese, salt, and pepper, the blend is formed into a loaf and cooked in a preheated air fryer.

Air Fryer Meatloaf:

  • 1 ½ pounds pork ground; mix; 675g
  • 1 ½ pounds beef ground; mix; 675g
  • 4 tablespoons chorizo chopped
  • ¾ cup gluten-free breadcrumbs 89g
  • 1 bell pepper deseeded and grated
  • 1 onion grated, small
  • 2 egg lightly beaten
  • 3 tablespoons ketchup
  • 1 tablespoons Dijon mustard
  • 1 tablespoon tamari soy sauce or Worcestershire sauce, if not gluten free
  • 3 tablespoons Parmesan Cheese grated
  • salt to taste
  • black pepper to taste

For Air Fried Meatloaf Glaze:

  • 4 tablespoons ketchup
  • 1 ½ tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat Air Fryer to 390 degrees F / 200 degrees C.
  2. Mix the ground pork and ground beef and chorizo in a bowl.
  3. Then add the rest of the ingredients and combine.
  4. Place mixture into a loaf pan or shape into a loaf and place onto aluminum foil.
  5. Put in the air fryer basket and cook for about 20 - 35 minutes. (Use a meat thermometer to check for doneness).
  6. While the meatloaf is cooking, mix the glaze. About 5 minutes before the meatloaf is done, spread the glaze over the meatloaf and cook until done.
  7. Remove from the air fryer and allow to cool for approximately 10 minutes before slicing and serving.

  • Experiment with the ratio of ground beef to pork for the flavor balance you prefer.
  • Grate onions and bell peppers finely so they fully cook and blend into the meatloaf texture.
