Classic Air Fryer Meatloaf
Description
The Classic Air Fryer Meatloaf uses a combination of ground pork, ground beef, and chopped chorizo to provide a flavorful and moist meat base. Grated bell pepper and onion add moisture and mild sweetness, suspended in a mixture bound by egg and gluten-free breadcrumbs. Seasoned with ketchup, Dijon mustard, tamari soy sauce, Parmesan cheese, salt, and pepper, the blend is formed into a loaf and cooked in a preheated air fryer.
The air fryer quickly browns the meatloaf, while a glaze of ketchup, brown sugar, apple cider vinegar, and Dijon mustard is brushed on five minutes before completion to provide a sticky, flavorful finish. Once cooked, resting the meatloaf allows juices to redistribute for a moist slice.
This meatloaf suits those seeking a gluten-free option and can be paired with vegetables or salads for a balanced meal. Grating vegetables finely ensures they cook through evenly and integrate well.
Tips include using a meat thermometer to ensure an internal temperature of 160°F (70°C) for safety, avoiding overmixing to prevent toughness, and preheating the air fryer for consistent cooking. Leftovers keep well refrigerated up to five days and can be reheated gently. Variations in ground meat ratio and added spices are possible to customize flavors.

- 1 ½ pounds pork ground; mix; 675g
- 1 ½ pounds beef ground; mix; 675g
- 4 tablespoons chorizo chopped
- ¾ cup gluten-free breadcrumbs 89g
- 1 bell pepper deseeded and grated
- 1 onion grated, small
- 2 egg lightly beaten
- 3 tablespoons ketchup
- 1 tablespoons Dijon mustard
- 1 tablespoon tamari soy sauce or Worcestershire sauce, if not gluten free
- 3 tablespoons Parmesan Cheese grated
- salt to taste
- black pepper to taste
For Air Fried Meatloaf Glaze:
- 4 tablespoons ketchup
- 1 ½ tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
Instructions
- Preheat Air Fryer to 390 degrees F / 200 degrees C.
- Mix the ground pork and ground beef and chorizo in a bowl.
- Then add the rest of the ingredients and combine.
- Place mixture into a loaf pan or shape into a loaf and place onto aluminum foil.
- Put in the air fryer basket and cook for about 20 - 35 minutes. (Use a meat thermometer to check for doneness).
- While the meatloaf is cooking, mix the glaze. About 5 minutes before the meatloaf is done, spread the glaze over the meatloaf and cook until done.
- Remove from the air fryer and allow to cool for approximately 10 minutes before slicing and serving.
Notes
- Experiment with the ratio of ground beef to pork for the flavor balance you prefer.
- Grate onions and bell peppers finely so they fully cook and blend into the meatloaf texture.
- Other vegetables like grated carrots or mushrooms can be added for extra moisture and flavor.
- Avoid overmixing the meat mixture to prevent a dense, tough meatloaf.
- Line the air fryer basket with parchment paper to ease cleanup and prevent sticking.
- Shape the loaf loosely to allow air circulation, improving cooking consistency.
- Preheat the air fryer before adding the meatloaf for best results.
- Check doneness with a quick-read meat thermometer aiming for 160°F (70°C) internal temperature.
- Let the meatloaf rest for 10 minutes after cooking before slicing.
- Store leftovers airtight in the refrigerator up to 5 days.
