Description
This beef stew begins by browning beef cubes in olive oil to develop color and flavor, then transferring them to a crock pot. Water, Worcestershire sauce, garlic powder or minced garlic, bay leaves, chopped onion, and spices including salt, pepper, smoked paprika, turmeric, onion powder, and ground cloves are added. Carrots and celery provide texture and vegetable flavor during the slow cooking process.
After cooking on low for eight hours or high for four, a mixture of cornstarch and cold water is stirred in to thicken the stew, along with a packet of Hidden Valley Ranch dressing mix for a unique seasoning note. Bay leaves are removed prior to serving. The stew offers tender meat and vegetables within a rich, mildly spiced broth.
This dish pairs well with crusty bread or mashed potatoes to soak up the sauce and can be adjusted with other herbs, spices, or vegetables as desired. Suitable for making large quantities, it stores well in the refrigerator and can be frozen for extended preservation.
Reheating can be done gently on the stovetop, in the oven covered, or in the microwave. Adjust seasoning if needed after reheating. The recipe is flexible enough to accommodate ingredient substitutions such as broth instead of water or adding other vegetables to utilize available fresh produce.
Ingredients
- 2 lbs stew beef cut into 1 inch cubes
- 2 teaspoon olive oil
- 2 Cups water
- 1 Tbs Worcestershire sauce
- 1 teaspoon garlic powder or one fresh clove garlic minced
- 2 bay leaf
- 1 onion medium, chopped
- 1 teaspoon salt
- 1 teaspoon raw sugar
- ½ teaspoon black pepper ground
- ½ teaspoon smoked paprika
- ½ teaspoon Turmeric
- ½ teaspoon onion powder
- ⅛ teaspoon cloves ground
- 4 carrot large, quartered and cut into small pie shaped pieces
- 3 celery stalks, halved and cut into small pieces
- 2 Tbs corn starch
- ¼ cup water
- 1 Ranch dressing mix packet of Hidden Valley
Instructions
- Brown meat in the olive oil in a skillet on the stove top over medium high heat (2-3 minutes). Place into crock pot
- Add the 2 cups of water and all ingredients to the crock pot. Cook in crock pot on low for 8 hours or on high for 4 hours.
- 30 minutes before serving, in a small bowl mix 2 Tbs of cold water and 2 tbs of corn starch together and mix until corn starch is dissolved. Once dissolved, add to the crock pot. Add the packet of Hidden Valley Ranch dressing mix as well. Remove the Bay Leaves before serving
Notes
- This stew freezes well for up to 3 months when stored in airtight freezer bags.
- It keeps refrigerated for 3 to 5 days; reheat on stove, oven, or microwave until warmed through.
- Ingredient quantities can be adjusted to serve different numbers; cooking times may need modification accordingly.
- Optional additions include other spices, vegetables, or substituting beer for water or broth for more flavor.
