Classic Broccoli Salad
Description
The salad includes about two large heads of broccoli cut into small florets mixed with cooked and chopped pork or turkey bacon, sunflower seeds for crunch, sweet raisins, and diced red onion for sharpness. The dressing is made by whisking plain full-fat Greek yogurt with apple cider vinegar, honey, water, salt, black pepper, and a hint of garlic powder. The ingredients are combined with the dressing and chilled several hours or overnight to develop flavor.
The broccoli provides a crisp base contrasting with the sweet, chewy raisins and smoky bacon. The sunflower seeds contribute texture, while the dressing adds creaminess and slight tartness. This salad works well as a side to grilled or roasted meats or as a picnic dish.
Chilling the salad is important to allow the flavors to meld and soften the broccoli slightly without losing its bite. Any preferred cooking method for bacon is acceptable, though oven-baked bacon ensures even cooking and crispness.
Ingredients
- 5 cups broccoli about 2 large heads, chopped florets
- 3 lices Bacon pork or turkey bacon work, cooked
- ½ cup sunflower seeds raw or roasted
- ½ cup raisins
- ⅓ cup red onion diced
- ¾ cup plain full-fat Greek yogurt
- 1 ½ Tablespoons apple cider vinegar
- 1 Tablespoon honey
- 1 Tablespoon water
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- garlic powder sprinkle of
Instructions
- If you haven't done so already, cook the bacon according to the package instructions. I like cooking it in the oven, but you can also cook it in a skillet on the stovetop or in the microwave.
- In a small bowl whisk together yogurt, apple cider vinegar, honey, water, salt, pepper and garlic powder.
- Add broccoli, sunflower seeds, raisins, red onion and bacon to the bowl and toss. Drizzle on dressing and toss until everything is coated.
- Cover container and chill in the fridge. Let sit for at least 3-4 hours before serving. Overnight works great too as this salad tastes better after it has had time to sit.
Notes
- Cook bacon in the oven at 400°F on a foil-lined baking sheet for about 20 minutes until crisp.
- Drain cooked bacon on paper towels to remove excess grease before adding to salad.
- Allow salad to chill at least 3-4 hours or overnight for best flavor development.
