Classic Macaroni Salad

Classic Macaroni Salad combines cooked elbow pasta with chopped eggs, bell pepper, onion, celery, green onions, pickles, corn, and diced cheddar cheese, all coated in a creamy dressing made from mayonnaise, yogurt, and tangy pickle juice. The salad is chilled before serving, allowing the dressing to meld with the ingredients for a mildly tangy, creamy side dish with varied textures from crunchy vegetables to soft pasta and cheese.

Description

This salad is built on elbow pasta cooked to al dente, mixed with a combination of chopped hard-boiled eggs, diced red bell pepper, red onion, celery, green onions, pickles, canned sweet corn, and cubed cheddar cheese. The dressing blends mayonnaise and plain yogurt with sugar, pickle juice, fresh parsley, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper, offering tang and creaminess that bind the salad ingredients without overpowering them.

Preparing the salad involves cooling the pasta before combining it with the diced ingredients and dressing. Chilling the salad for at least two hours promotes flavor melding and enriches the salad’s texture. It is served cold, ideal as a side dish complementing a variety of meals.
