- 2 beef patties about 4-6 oz each
- 4 slices rye bread
- 4 slices Swiss cheese or American cheese
- 1 medium onion thinly sliced
- 2 tablespoon unsalted butter for toasting the bread
- 1 tablespoon olive oil for cooking the patties
- salt and pepper to taste
- 1 tablespoon mayonnaise optional for spreading

Instructions
Caramelize the Onions:
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, for about 10 minutes until soft and golden brown. Set aside.
Cook the Patties:
- Season the beef patties with salt and pepper on both sides.
- In the same skillet, cook the patties over medium-high heat for about 3-4 minutes per side for medium doneness, or longer depending on your preferred level of doneness. Remove from the skillet and set aside.
Assemble the Patty Melts:
- Spread a thin layer of mayonnaise (optional) on one side of each slice of rye bread.
- Place one slice of cheese on the non-mayo side of each bread slice.
- Place a cooked patty on one slice of bread, then top with the caramelized onions and the second slice of cheese. Top with the other slice of bread, mayo side facing out.
Grill the Patty Melts:
- In the same skillet, melt 1 tablespoon of butter over medium heat.
- Carefully place the assembled sandwiches in the skillet. Grill for about 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese has melted.
Serve:
- Remove from the skillet, slice in half, and serve hot with your favorite side, like fries, chips, or a pickle.
Notes
- For a spicier version, add some sliced jalapeños or a drizzle of hot sauce to the onions before assembling the sandwich.
- You can substitute the Swiss cheese with cheddar or American cheese, depending on your preference.
- For a lighter version, use lean ground turkey or chicken for the patty.
