Classic Salmon Burgers

Classic Salmon Burgers use fresh sockeye salmon cut into pieces and combined with egg, panko, soy sauce, lemon zest, and seasoning to form flavorful patties. Cooking the patties until crisp and browned on both sides provides a satisfying texture, while serving on toasted buns with butter lettuce and avocado slices adds freshness and creaminess. These burgers highlight the natural flavors of salmon enhanced by simple seasonings and a gentle binder.

Description

This recipe features skinless, deboned sockeye salmon cut into uniform ½-inch squares, ensuring texture without becoming mushy. The salmon is gently mixed with an egg, panko breadcrumbs for binding and lightness, soy sauce for umami, lemon zest for brightness, and seasoning with kosher salt and freshly ground black pepper. Shaping the mixture into four even patties preserves consistency for cooking.

Cooking involves searing the salmon patties in a hot skillet or grill pan with a bit of olive oil, developing a crisp, golden exterior while maintaining tenderness inside. After cooking, the salmon burgers are assembled on toasted buns layered with butter lettuce and sliced avocado, offering complementary textures and richness.

These salmon burgers serve as a satisfying meal option with straightforward preparation and balanced flavors. They work well for casual lunches or dinners, providing a seafood alternative to traditional beef burgers.

Using pre-skinned and deboned salmon from your fishmonger simplifies preparation time. Cooking times range from 5 to 9 minutes depending on heat. Grilling is an alternative to skillet cooking if desired, with timings adjusted accordingly.

Ingredients

Servings
  • 1 ¼ lbs. sockeye salmon skinless and deboned
  • 1 egg
  • ¼ cup panko breadcrumbs
  • 1 tablespoon soy sauce low-sodium
  • 1 lemon zested
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • butter lettuce
  • avocado sliced

Instructions

  1. Using a sharp knife, slice the skinless, deboned salmon into ½” square pieces. (Carefully cut this, as you want to keep the integrity of the salmon pieces without them becoming mushy. Cutting the salmon down took me about 10 minutes.)
  2. Place the salmon into a glass bowl, and add the egg, panko, salt, pepper, soy sauce and lemon zest.
  3. Using your hands, toss the salmon until just combined.
  4. Separate into four evenly sized patties.
  5. Preheat a skillet or grill pan over medium-high heat with a little bit of olive oil.
  6. When the pan is hot, place the salmon patties into it, and sear on one side.
  7. Once one side is crisp and browned, flip and cook the other side until equally browned.
  8. Remove the salmon patties from the heat, and place on the toasted buns.
  9. Place avocado slices on top of the burgers and a leaf of butter lettuce beneath them. Serve immediately.

Notes

  • Request skinless, deboned salmon from your fishmonger to reduce prep time at home.
  • Cook salmon patties for 5 to 9 minutes, ensuring they are cooked through but remain moist.
  • Salmon burgers can also be cooked on a grill, adjusting cooking times based on heat.
