  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F and grease muffin tins.
  2. Beat the egg with the milk and oil.
  3. Add the remaining ingredients and mix until the batter is moist and lumpy.
  4. Pour the batter into the muffin tins until the cups are 2/3 full.
  5. Bake for about 20 to 25 minutes or until a toothpick inserted into the center comes out clean or has a few moist crumbs on it.

Notes

  • Coat blueberries with a small amount of flour before folding into the batter to prevent them from sinking.
  • For jelly muffins, fill muffin cups halfway with batter, add a teaspoon of jelly, then cover with more batter to two-thirds full.
