  • 1 iceberg lettuce head
  • 1 cup blue cheese dressing
  • 3/4 cup grape tomatoes , halved or quartered
  • 1/2 cup blue cheese crumbles
  • 1/2 cup Bacon , crumbled
  • 2 tablespoons chives , chopped
  • sea salt to taste, Maldon
  • black pepper to taste, freshly ground

Instructions

  1. Remove any unsightly leaves of lettuce from the outside of the head, then chop into quarters. Leaving the base intact will help keep the leaves intact while serving, so I do not cut this off.
  2. Place one quarter on each plate. Spoon dressing evenly over each quarter.
  3. Evenly divide a top with the grape tomatoes, blue cheese crumbles, bacon and chives.
  4. Finish with Maldon sea salt and freshly ground black pepper.
