Clays Famous Three Bean Casserole
Description
This casserole begins by draining and combining three types of beans: cannellini, red kidney, and pork and beans. Bacon is cooked until nearly crisp, then removed, leaving about 2 tablespoons of rendered grease for sautéing diced onion until soft. Brown sugar and apple cider vinegar are added and boiled briefly to create a sweet and tangy sauce base. The bacon, beans, and this sauce are mixed thoroughly in a casserole dish and baked at 375°F for 45 minutes.
The finished dish has tender beans coated with a rich, slightly sweet and tangy sauce complemented by smoky bacon and mellowed onions. It is typically served warm as a hearty side or main component.
