Ingredients

  • 2 cups flour
  • tsp baking powder
  • 1 tsp salt
  • 1 cup caster sugar
  • 1 cup PLAIN yogurt
  • 3 extra-large egg
  • ½ cup canola oil
  • ½ tsp vanilla extract
  • clementine zest of 1

For the syrup

  • 1 cup clementine juice
  • ½ cup sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 180°C/350°F. Grease and line a standard loaf pan with parchment paper.
  2. Sift all the dry ingredients into a large mixing bowl.
  3. Add the wet ingredients and mix until just combined.
  4. Pour the batter into the prepared loaf pan and place in the oven.
  5. Allow to bake for 25-30 minutes or until a skewers inserted comes out clean.
  6. While the cake is baking, combine the syrup ingredients in a small saucepan and bring to a simmer. Cook until the syrup is the consistency of maple syrup.
  7. When the cake comes out of the oven, pour the syrup over and allow to cool completely.
  8. Slice and serve.
