Cloud Bread

Cloud Bread is an airy, light bread alternative made from whipped egg whites stabilized with cream of tartar, combined with egg yolks and softened cream cheese. The result is a soft, slightly spongy bread with a delicate texture, achieved by baking dollops of the mixture until golden and set. Its simplicity requires just a few ingredients to produce a gluten-free bread-like product.

Description

The recipe separates egg whites from yolks, beating the whites with cream of tartar and salt to soft peaks to incorporate air and volume. Egg yolks are whipped with cream cheese until fully combined, then gently folded into the whites to maintain the airy structure. The batter is portioned in scoops on parchment-lined baking sheets and baked at low temperature until golden and firm. The bread’s texture is light and fluffy rather than dense.

Cloud Bread serves as a low-carb or gluten-free bread substitute and can be eaten plain or filled as sandwiches. Adding cheese sprinkled on top during the last minutes of baking introduces a savory note. It stores for a couple of days at room temperature or longer refrigerated between parchment sheets.

To vary flavor, include grated cheddar cheese sprinkled on top for the last couple minutes of baking. Storing in a sealed bag at room temperature keeps it fresh for a short time, while refrigeration extends shelf life and prevents sticking by layering with parchment paper.

  • 3 large egg divided
  • 1/4 /4 teaspoon cream of tartar
  • 1/4 /4 teaspoon salt sea salt
  • 3 tablespoons cream cheese softened

Instructions

  1. Preheat oven to 300 degrees and line a baking sheet with parchment paper.
  2. Separate egg yolks and egg whites into separate bowls. In a stand mixer (or with a hand mixer), beat the egg whites, cream of tartar, and salt until soft peaks form.
  3. In a separate bowl, mix the egg yolks and cream cheese with a mixer until fully combined.
  4. Gently fold the egg yolk mixture into the whipped egg whites until completely combined.
  5. Spread 8 even scoops of the batter onto the prepared baking sheets leaving space in between each portion. Flatten batter to desired thickness.
  6. Bake for 20-25 minutes or until golden brown. If adding cheese sprinkle on top for the last couple minutes of baking.

Notes

  • Add cheddar cheese sprinkled over the bread in the last minute of baking for a savory variation.
  • Store at room temperature in a sealed bag for a couple of days to maintain freshness.
  • For longer storage, refrigerate between layers of parchment paper to prevent sticking.
