Club Med White Chocolate Bread

Club Med White Chocolate Bread is a yeast-leavened loaf featuring white chocolate chips mixed into the dough, creating sweet pockets throughout. The dough requires two rises to develop flavor and an airy crumb. Baking starts at a high temperature to form a golden crust and finishes lower to cook through. This bread brings a subtle sweetness contrasting with the savory bread base, ideal for a unique treat or accompaniment to mildly flavored spreads or cheese.

Description

This bread recipe uses bread flour, instant yeast, and lukewarm water to create a sticky dough rich with white chocolate chips. Kneading develops gluten for a soft, yet structured crumb. The first rise doubles the dough volume, preparing for shaping into elongated loaves. A second rise after shaping puffs up the bread for lightness. Baking begins at 450˚F to crisp the crust quickly, then reduces to 350˚F to finish baking to golden brown.

The white chocolate chips embedded in the dough add interest and a sweet note that contrasts with the slight saltiness of the bread. This results in slices that can be eaten as a dessert bread or with butter or cream cheese for breakfast or snacks.

Cool the loaves briefly on a rack before serving to let the texture settle. The recipe does not include toasting instructions but the bread can likely be enjoyed fresh or toasted.

Ingredients

Servings
  • 3 3/4 cup bread flour
  • 2 tsp instant yeast
  • 1 1/2 cup water plus more if necessary, lukewarm
  • 1 1/2 tsp salt
  • 12 oz white chocolate chips

Instructions

  1. In an electric mixing bowl, combine water, yeast, salt. Add flour and white chocolate chips, mix with wooden spoon until everything is combined. It will be somewhat sticky dough. If the dough seems too stiff, add more water, 1 tablespoon at a time.
  2. Attach a dough hook to a mixer and knead the dough for 6-7 minutes on the medium speed.
  3. Cover the bowl with a towel and let the dough rise to double in volume, about 1 hour.
  4. Deflate the dough and turn it over to a floured board. Divide the dough in half and roll each half into an elongated loaf shape. Sprinkle the top with extra flour and transfer the loaves onto a greased pan. Cover and let them rise again, about 45-60 minutes.
  5. Preheat the oven to 450˚F. When the oven is ready and the loaves are risen, put it in the hot oven and bake for 10 minutes. Reduce the temperature to 350˚F and continue to bake another 10-15 minutes or until it forms dark golden brown on the crust.
  6. Cool the loaves on a rack for 5 minutes. Enjoy the warm bread while they are still warm.
