Coca Cola Brisket
Description
Coca Cola Brisket features a beef brisket cooked slowly with a simple blend of cola, chili sauce, and dried onion soup mix. The brisket is prepared by patting it dry, then roasting it covered to allow the mixture to tenderize the meat thoroughly over roughly 2 to 3 hours depending on size. After cooking, the brisket rests before being trimmed and sliced thin. The pan juices are defatted and can be simmered down to a thicker sauce if desired. This method results in tender, flavorful slices of beef with a sweet and savory glaze from the cola and chili sauce combination.
The flavor profile balances the mild sweetness of cola with the umami depth from the chili sauce and onion soup mix, creating a moist brisket with a rich sauce. The slow roasting approach ensures the meat becomes tender enough to slice thinly without drying out.
This dish is typically served sliced as a main course accompanied by the pan sauce, making it suitable for family dinners or gatherings where the brisket can be presented as a centerpiece. The thickened sauce can be spooned over the meat or served on the side for dipping.
The recipe notes recommend a slow cooker alternative where all ingredients are combined and cooked on low for 9 hours, simplifying the process. Skimming fat from the sauce after cooking improves the final texture and flavor of the pan juices. Adjustments can be made in cooking times based on slow cooker variation or personal equipment differences.
Ingredients
- 4 to 6 pounds beef brisket visible fat untrimmed
- One (12-ounce) can cola Coca-Cola brand
- 1 envelope dried onion soup mix (yes, seriously)
- 1 cup chili sauce may substitute ketchup or as as reader Ryan suggests: ketchup mixed with hot sauce, bottled, such as Heinz
Instructions
- To make the Coca Cola Brisket in your slow cooker, see the Slow Cooker Variation below. To make the Coca Cola Brisket on the stovetop, preheat the oven to 325°F (160°C).
- Pat the brisket dry with paper towels. Place the brisket in a nonreactive roasting pan or a glass baking dish just large enough to snugly fit the brisket.
- Mix the Coke, chili sauce, and dried onion soup mix in a bowl and pour it over the brisket. Cover the baking dish or roasting pan tightly with aluminum foil. Roast the brisket until tender, about 30 minutes per pound (so figure 2 to 3 hours total, depending on the size of your brisket).
- Transfer the brisket to a cutting board and let it rest for at least 10 minutes. Meanwhile, skim the fat from the surface of the pan juices and discard. Pour the defatted pan juices into a gravy boat or, if a thicker consistency is desired, pour the juices into a saucepan and simmer until reduced slightly.
- Trim any visible fat from the brisket, then thinly slice it against the grain. Pile the slices of brisket on a platter and pass the warm pan juices on the side.
Notes
- The slow cooker method simplifies preparation by cooking all ingredients on low for 9 hours, yielding tender results.
- After cooking, skim any fat from the pan juices before serving or reducing the sauce to desired thickness.
- Letting the brisket rest for at least 10 minutes before slicing ensures juiciness and easier slicing.
- If reducing the sauce, simmer the defatted pan juices until they reach the preferred consistency.
