  • 2 tablespoon chia seeds
  • ½ teaspoon maple syrup or honey, or a bit more to taste
  • ½ peach or yellow if you prefer, white

Instructions

  1. Mix together the coconut milk, chia seeds and maple syrup or honey in a bowl and leave to expand refrigerated for around 20mins, or you can leave overnight.
  2. Cut the peach into small chunks and layer up the chia mixture a couple spoonfuls at a time followed by a layer of peach chunks. Alternatively, if you're not worried about how it looks, just throw it all in together and stir.

Notes

  • The recipe produces a single snack or dessert-sized serving; increase ingredients proportionally for larger portions or breakfast-sized servings.
  • Chilling the chia pudding for a longer time or overnight improves the gel formation and texture.
