Description

The recipe begins by pulsing shredded coconut and raw almonds and cashews in a food processor until finely chopped. These nuts provide chew and crunch within the energy balls. Medjool dates are then processed separately into a sticky paste, which serves as a natural binder and sweetener.

The nut mixture is combined with the date paste in the food processor and pulsed together until combined but still textured. Finally, chocolate chips are folded in with a few pulses, so they remain dispersed without fully breaking down. The mixture is then formed by hand or with a cookie scoop into bite-sized balls, each about one tablespoon.

These energy balls can be eaten immediately or stored in the refrigerator for up to two weeks. Freezing extends storage to three months. If dates are hard, soaking them in warm water before processing helps soften them, ensuring a smooth and sticky mixture. The balls provide a portable snack combining natural sugars, fats, and nuts for sustained energy.

  • 1 1/2 cups Medjool dates pitted
  • 3/4 cup coconut unsweetened, shredded
  • 1/2 cup almond raw
  • 1/2 cup cashew nuts raw
  • 1/3 cup chocolate chips

Instructions

  1. Process nuts: Place coconut, almonds and cashews into food processor fitted with the S-blade and pulse until everything is chopped into small pieces. Place nut mixture in a bowl and set aside.
  2. Process dates: Put dates into the food processor and pulse until a paste forms. The dates will probably form into a sticky ball. If they do, break about the ball a bit with your hands.
  3. Add remaining ingredients: Add nuts and coconut back into the processor with the dates and pulse until well combined. Add chocolate chips and pulse a few more times, until they’re just incorporated.
  4. Form balls: Once mixture is combined, use your hands (or a cookie scoop) to scoop and form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
  5. To store: Store any leftovers in the fridge with parchment paper between them for 1-2 weeks or in the freezer for up to 3 months.

Notes

  • Soak hard or dry Medjool dates in warm water for 10-15 minutes to soften before processing. Drain thoroughly before use.
  • Store finished energy balls in the refrigerator with parchment paper separating layers for up to 1-2 weeks.
  • For longer storage, freeze energy balls for up to 3 months.
