The bites are stored in an airtight container and kept refrigerated for up to a week or frozen for longer life. They can be thawed overnight prior to eating. Ingredients
- 1 cup cashew nuts raw
- 1 cup Medjool dates soft, pitted, about 10 large
- ½ cup coconut fine shredded, unsweetened
- lime zest from 1
- 2 tablespoons lime juice fresh
- ½ cup unsweetened coconut fine shredded, for rolling
Instructions
- Add all ingredients except the extra shredded coconut to a food processor and pulse until ingredients are well combined and sticky. Roll into 14 balls. Next roll in shredded coconut if desired and place in an airtight container in the fridge for up to 1 week. Feel free to freeze these for up to 3 months.
Notes
- If dates are not soft, soak pitted dates in warm water for 5-10 minutes to soften them for easier blending.
- Keep energy bites refrigerated in an airtight container for up to one week.
