Description

This pudding begins with chia seeds soaked in canned light coconut milk sweetened with maple syrup. After an initial rest and stirring to break up clumps, it chills to thicken into a gel-like consistency. Separately, fresh mango is peeled and blended into a silky puree. The pudding is assembled in layers alternating chia pudding and mango puree, then topped with toasted coconut flakes for added texture and subtle crunch.

The flavor profile is creamy and mildly sweet with tropical notes from coconut and mango. This chilled dish works well as a healthy snack, light dessert, or breakfast. It keeps refrigerated for several days, allowing for convenient make-ahead preparation.

  • 1 cup coconut milk from a can, light
  • 3 Tablespoons chia seeds
  • 1 Tablespoon maple syrup or sweetener of choice
  • 1 small Mango peeled
  • Toasted coconut flakes for topping

Instructions

  1. Stir together coconut milk, chia seeds and maple syrup. Let sit for 5 minutes then stir the mixture again to get out any clumps that formed. Place mixture in the fridge to set, at least 30 minutes but up to 12 hours.
  2. While chia pudding is setting, peel mango and remove flesh. Place mango flesh in a high powdered blender and blend until smooth.
  3. Once chia pudding has set, grab two jars and spoon chia pudding into each. Top with a layer of mango puree and then continue to layer. I did two layers and ended with the chia pudding. Sprinkle a few pieces of toasted coconut on top and enjoy.
  4. Refrigerate any leftovers. Mango chia pudding should keep for at least 3-4 days.
