Coconut Oatmeal Cookie Balls (No-Bake)

These Coconut Oatmeal Cookie Balls are easy to make, and kids can join in the fun! No need to turn on the oven. Thick, chewy, yummy textured, and delicious right out of the fridge!

Ingredients

  • 1 ½ cups granulated sugar
  • ½ cup melted coconut oil
  • ½ cup creamy peanut butter
  • ½ cup almond milk
  • ¼ cup cocoa powder
  • 1 tsp fine salt
  • 1 tsp pure vanilla extract
  • 3 cups old-fashioned rolled oats

Instructions

  1. In a saucepan set over medium heat, stir together the sugar, coconut oil, peanut butter, almond milk, cocoa powder, salt, and vanilla. Stir to combine well. Continue to stir on medium heat until mixture comes to a rolling boil (bubbling all over the surface.) Let boil this way for 4 minutes, stirring constantly and scraping sides. Immediately remove saucepan from heat once your 4 minutes are up. Add vanilla (be careful, mixture will bubble up again) and stir well. Stir in the oats to thoroughly coat.
  2. Carefully scoop mixture into heaping tablespoons; place cookie balls on parchment or wax paper to cool completely. If the mixture is very thick, you may need to help shape the cookie balls with hands, so wait until it's not too hot to touch. Rinse hands with water every once in awhile for ease of ball-shaping.
  3. Cool completely at room temp or better yet, cover and chill in fridge and eat them straight from the fridge! They're most delicious when chilled.
