Coconut Peanut Butter

This Coconut Peanut Butter recipe blends roasted salted peanuts with unsweetened coconut flakes until smooth and creamy. The combination yields a peanut butter with a subtle coconut flavor and slight texture from the coconut. It can be a spread or ingredient for snacks and sandwiches, offering a different take on traditional peanut butter.

Description

The Coconut Peanut Butter is made by processing dry roasted salted peanuts and unsweetened coconut flakes together until the mixture reaches a smooth, creamy texture. The peanuts provide a rich, nutty base while the coconut flakes add a mild sweetness and slight chewiness. Processing time varies from about 2 minutes in a Vitamix to around 10 minutes in a food processor, with occasional scraping to blend evenly. No additional oils or sweeteners are necessary, but sweetened coconut flakes or coconut sugar can be added for a sweeter variation.

The finished product can be used similarly to traditional peanut butter—in sandwiches, recipes, or as a dip. It stores well at room temperature in a sealed jar for up to a month but should be stirred before each use as natural oil separation may occur.

Using dry roasted peanuts enhances the flavor and texture, making this recipe a straightforward alternative to store-bought coconut peanut butter blends.
