Description
This Coconut Syrup recipe creates a versatile, rich syrup by simmering unsweetened coconut milk with sugar, yogurt, light corn syrup, cornstarch, and salt. The mixture is brought to a boil and maintained with frequent whisking to prevent lumps and ensure even thickening. The result is a syrup with a creamy, smooth consistency and subtle tang from the yogurt, balanced by sweetness and a mild coconut aroma.
The syrup can be served warm over breakfast items like pancakes, waffles, French toast, or ice cream, adding moisture and coconut flavor. Alternatively, chilling it in the refrigerator increases its thickness, making it suitable for drizzling or spooning onto desserts or even into drinks for added sweetness.
The use of cornstarch as a thickener and the constant whisking during boiling are key to achieving the right texture without separation. Adjusting the thickness is as simple as chilling the syrup longer if a more viscous consistency is preferred.
Ingredients
- 1 can coconut milk 13.5 ounces, unsweetened
- 1 cup sugar
- 5 ounces yogurt or coconut or vanilla flavored, plain, Greek
- 1/4 cup light corn syrup
- 3 teaspoons cornstarch
- 1/2 teaspoon salt
Instructions
- Place all ingredients in a heavy medium saucepan over medium-high heat and bring to a boil, whisking often.
- When syrup comes to a boil, reduce heat slightly and continue to boil for 5 minutes, whisking constantly. If it starts to boil up too high, remove from the heat and allow the mixture to recede before placing over the heat again. Reduce heat if necessary.
- Remove syrup from heat and allow to cool to room temperature. If you want to have thicker syrup, place in the refrigerator until cooled.
- Serve over pancakes, waffles, French toast, ice cream, or in your favorite drinks.
