Coffee Jerk Pork Chops Recipe
Description
The Coffee Jerk Pork Chops combine a marinade rich in apple juice and vinegar with instant coffee and a blend of spices including cayenne, allspice, thyme, and brown sugar. This mixture delivers a balance of sweet, tangy, and aromatic notes that complement the pork. The cooking method involves marinating the bone-in pork chops for at least six hours to allow flavors to penetrate and the meat to tenderize. Grilling the chops over indirect heat at high temperature imparts a subtle smoky flavor and caramelization while preventing flare-ups. The internal temperature of 145°F ensures the pork remains juicy and safe to eat.
The finished chops have a tender interior and a lightly crisp exterior from the grill. Their complexity makes them suitable as the main course for gatherings, paired with simple sides like grilled vegetables or rice. The marinade's distinctive coffee undertone sets them apart from standard grilled pork chops.
Cooked pork chops can be stored in an airtight container in the refrigerator for 3-4 days and reheated gently in the microwave, flipping periodically for even heating. Freezing up to two months is possible when cooled properly. Reheating should be done once and consumed immediately after to maintain quality and safety.
Ingredients
- 6 pork chops (bone in, ¾" thinck)
Coffee marinade
- 2 cups apple juice
- ¼ cup apple cider vinegar
- ¼ cup instant coffee
- 1 Tbsp kosher salt
- 1 cube chicken bouillon
- 3 garlic miced, cloves
- ½ tsp cayenne pepper
- ¼ tsp allspice
- ½ tsp thyme
- 1 Tbsp brown sugar
Instructions
- Place all ingredients for the marinade in a large bowl and use a hand blender to mix well. You can also use a blender. Place the pork chops in a 1 gallon zip top freezer bag and pour marinade over them. Try to purge out the excess air and seal. Refrigerate for about 6 hours; if you can marinate overnight, even better.
- For grilling, preheat the grill to 500°F. Place pork chops on the grill, but not directly on top of the flames. (Indirect heat) Cook for two minutes. Give them a quarter turn. Cook an additional two minutes. Flip and repeat the process.
- When internal temperature reaches 145°F, transfer to a platter, cover and allow them to rest for about 5 minutes.
- Serve with your favorite sides.
Notes
- Marinate pork chops for at least 6 hours or overnight for best flavor and tenderness.
- Grill chops using indirect heat at 500°F, turning every 2 minutes with quarter turns for even cooking.
- Allow chops to rest for 5 minutes after cooking to retain juices.
- Store cooked chops in an airtight container in the refrigerator up to 4 days; reheat in microwave, flipping every 30-45 seconds.
- Cooked chops can be frozen for up to 2 months; thaw in refrigerator before reheating.
