Description
This recipe uses a 3-pound beef roast cooked in a slow cooker with diced green pepper, jalapeno, chipotle chile, and garlic. Seasoned with cumin, onion powder, salt, and black pepper, the beef is cooked with a can of Coke Zero, which adds subtle sweetness without sugar. Ingredients
- 3 lb beef roast
- 1 green pepper
- 1 jalapeno pepper
- 1 chipotle chile
- 4 cloves garlic
- 1 teaspoon cumin
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- black pepper to taste
- 12 oz Coke Zero can
Instructions
- Put the roast in a slow cooker.
- Chop the green pepper, jalepeno pepper, chipolte chile and garlic finely and add to the slow cooker.
- Sprinkle the cumin, onion powder, salt and pepper over the meat.
- Pour a can of Coke Zero over the entire dish.
- Cook for 5 hours on low. Then shred the beef with 2 forks and return it to the slow cooker (still on low) to cook for another hours or longer.
