Description
Cold Cucumber Soup features peeled, seeded, and sliced English cucumbers that are salted to draw out excess moisture before being blended with full-fat Greek yogurt, minced shallot, garlic, fresh dill, lemon or lime juice, and ground cumin. The ingredients are pureed until smooth, producing a creamy, cool soup with a balance of fresh, tart, and savory flavors.
The cucumber's crispness and the yogurt’s richness create a smooth texture with subtle dill herbaceousness and the bright acidity of citrus juice. This soup is best served chilled after at least an hour in the refrigerator, making it suitable as a light appetizer or a refreshing summer meal.
Ingredients
- 16 ounces yogurt full fat, plain, Greek
- 2 cucumber peeled, seeded, and sliced, English
- 1 shallot minced
- 1 clove garlic minced (about 2 teaspoons
- 1/4 teaspoon cumin ground
- 1 lemon juiced (or lime)
- 1-3 teaspoons dill chopped, fresh
- kosher salt to taste
Instructions
- Peel cucumbers and slice lengthwise. Remove seeds and slice.
- Lay sliced cucumbers on a sheet pan covered with 2 layers of paper towel. Salt cucumbers liberally. Let them "sweat", about 20 minutes, to release moisture.
- In a blender or food processor, blend cucumbers, yogurt, shallot, garlic, fresh dill, lime or lemon juice and ground cumin.
- Puree until smooth, about 1 minute.
- Check seasoning and add salt if necessary. Chill at least an hour before serving.
