This tasty cold Quinoa Salad recipe is versatile and delicious! Add your favorite veggies and meat for the taste you'll crave.

Ingredients
- 2 cups water cold
- 1 cup quinoa
- salt
- 1 cucumber peeled and chopped, whole
- 1 1/2 cups grape tomato halved
- 1 cup swiss cheese cubed
- 1 cup salami sliced, low fat
- 3 tablespoons balsamic dressing low fat
Instructions
- In a small pot, stir water, quinoa and salt together. Cover and bring to boil. Reduce to simmer until water has been absorbed, about 20 minutes. After it's cooked, pour into large bowl to cool slightly.
- After 5 minutes, pour in chopped veggies, meat and cheese. Toss with dressing and refrigerate until completely chilled. Serve.
