Description

The process begins by generously seasoning the salmon with salt and sugar to cure it in the refrigerator for 12 to 18 hours. This step firms the flesh and imparts a subtle sweetness. After curing, the salmon is rinsed and dried, then soaked in a mixture of liquid hickory smoke and water for 6 to 8 hours in the fridge, turning occasionally to distribute flavor evenly.

Following the soak, the salmon is dried on a wire rack at room temperature for about 8 hours to develop a dry exterior, enhancing texture and flavor intensity. Thin slices cut from the prepared salmon provide a balance of smoky, sweet, and savory qualities.

  • 2 lb salmon fillet
  • 1/2 cup salt
  • 1/4 cup sugar
  • 6 tbsp liquid smoke hickory flavor
  • 1/2 cup water

Instructions

  1. Dry the salmon fillet with a paper towel. Season each side of the fillet generously with salt and sugar. Place it in a dish, cover, and allow it to cure for 12-18 hours in the fridge.
  2. Rinse the salmon under cold water to remove any extra seasoning. Dry it with a paper towel.
  3. Combine liquid smoke with water in a bowl.
  4. Soak the salmon in the liquid smoke mixture for 6-8 hours in the fridge, flipping it every couple of hours to ensure both sides of the fillet are seasoned.
  5. Remove the salmon from the liquid smoke mixture and dry with a towel. Let the salmon sit at room temperature on a wire rack for about 8 hours to create nice dry crust. 
  6. Slice the salmon into thin pieces and serve as you wish. Enjoy!
