Collard Greens

This Collard Greens recipe uses fresh collard leaves simmered with bacon, onions, garlic, and chicken broth for a tender, flavorful side dish. The cooking method softens the hearty greens while infusing them with savory bacon flavor and aromatic seasonings.

Description

The preparation starts by washing and removing the fibrous stems from the collard greens, then cutting the leaves into large pieces. Bacon is cooked with butter until crisp, releasing rich fat, then onions are added and softened. The collards and garlic go in next, cooking briefly to wilt the leaves.

Chicken broth is poured in, covering the greens partially, and the dish simmers covered over low heat for 35-40 minutes until tender but not mushy. Salt and black pepper are added to taste, balancing flavors without overpowering the natural earthiness of the greens and the smoky bacon.

Collard greens prepared this way are a savory, warming side that pairs well with a variety of main dishes. Garnishing with some reserved crispy bacon slices adds texture contrast and visual appeal.

Leftover greens store well refrigerated for several days, making this a practical dish to prepare ahead and reheat gently before serving.
