Ingredients
For the whipped feta:
- 1 1/4 cup vegan or regular feta cheese, crumbled
- 1/2 cup vegan thick yogurt or Greek yogurts
- zest from one lemon
- 1 tbsp lemon juice
- ground pepper
For the sauteed apples:
- 2 tbsp vegan or regular salted butter
- 1 apple, diced
- 1 tbsp honey plus more to drizzle substitute with maple syrup if desired
- pinch chili flakes
- 1/2 cup Sante Nuts candied walnuts
For serving:
- 2-3 warmed pitas, cut into triangles
- 1 bunch chives, minced
Instructions
- In a food processor, add the feta cheese, Greek yogurt, lemon juice, lemon zest and a pinch of ground pepper and pulse until smooth and light. Alternatively you can use a hand mixer to whip these ingredients together.
- Scoop the feta into a low, medium-sized bowl and set in the fridge until ready to use.
- To prep the apples: melt butter over medium heat in a frying pan and add apples, honey and pinch chili flakes. Cook 5-6 minutes until apples have softened. Set aside to cool.
- To assemble the dip, spread feta in a thick layer in low bowl or plate. Drizzle top with sauteed apples, another drizzle of honey if desired, chopped candied walnuts and chives. Serve with warmed pita slices.
Notes
- Pink Lady apples are delicious in this recipe.
- Want to make this ahead of time? Simply make the whipped feta dip and store in the fridge. About half hour before serving, remove from the fridge and then make and top with the sauteed apples.
- If you want to serve with baguette instead, follow the instructions in this recipe Hot Lemon + Garlic Oil Burrata Cheese (with crispy baguette) to make crispy baguette.
- To make this dairy free, use your favorite vegan feta!
- Store whipped feta in the fridge in a tightly sealed container for 3 – 5 days.
- If you are not a fan of apples, try using a Bartlett or Anjou pear.
