How to Make Compound Butter

Ingredients
- 1½ ticks butter unsalted, slightly softened
- 1 small shallot roughly chopped
- 1 handful flat leaf parsley
- 3 prigs savory leaves removed, stems discarded, fresh
- 3 prigs marjoram leaves removed, stems discarded, fresh
- salt to taste, kosher salt
- white pepper to taste, kosher salt
- lemon zest of 1
- ½ teaspoon Old Bay seasoning or to taste
Instructions
- Spin everything in a food processor until all the ingredients are blended, and the herbs are finely chopped. The butter should be a lovely mostly-uniform bright green.
