Description
The compound butter combines softened butter with zest from one orange, sofrito or garlic for aromatic intensity, fresh herbs including parsley and oregano, and seasoning. It is worked together until uniform and then used as a flavorful spread under the skin of a seasoned or brined turkey or chicken up to 10 pounds. By applying the butter underneath the skin of the breast and thighs and over the skin surface, the roasting process benefits from added fat infusion and enhanced flavor.
The butter’s citrus and herbal notes complement poultry well, aiding in crisping skin while keeping the meat moist. This compound butter is an easy way to add complex flavor without extra steps during cooking.
It can be prepared ahead and stored in the refrigerator.
For best use, allow the chilled butter to soften at room temperature before spreading for easier application.
Ingredients
- 8 tablespoons unsalted butter 1 stick, softened
- orange about 2 teaspoons, zest from 1 whole orange
- 1 tablespoon sofrito or 3 cloves of garlic, minced, Brazilian style
- 1 tablespoon parsley fresh, minced
- 3 prigs oregano leaves fresh, minced
- salt to taste
- black pepper to taste
Instructions
- Add all of the ingredients to medium-sized bowl.
- Stir with a spatula until combined.
- Use it on seasoned/salted/brined chicken or turkey up to 10 lbs. Apply and spread liberally under the skin of the chest area, then apply the rest under the skin on the thighs and over the skin all over.
- Bake as desired.

Notes
- Make the compound butter ahead and store it sealed in the refrigerator until needed.
- Remove from the refrigerator 1-2 hours before use to soften for easier spreading under the turkey skin.
