Condensed Cream of Chicken Soup
Description
Condensed Cream of Chicken Soup is made by combining evaporated milk, chicken broth, and seasonings like poultry seasoning, garlic, and onion powders. Cornstarch is used to thicken the mixture while cooking over medium heat, resulting in a thick and creamy base. Butter is stirred in last for richness, and optional cooked chicken adds bits of meat to the soup.
The flavor is mild and comforting, with a smooth texture that thickens further when refrigerated. This homemade version replicates canned soup for use in casseroles or soups, allowing control over ingredients and freshness.
This recipe can replace two cans of condensed cream of chicken soup and should be refrigerated for up to 5 days. It needs gentle handling in slow cookers to prevent curdling, especially if made with regular milk instead of evaporated milk. It’s best not to freeze this soup to maintain texture.
Ingredients
- 1 ¼ cups evaporated milk you can use regular milk* in a pinch, it just won't be quite as creamy
- ¾ cup chicken broth
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ½ teaspoon poultry seasoning
- 4 tablespoons cornstarch
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 1 tablespoon butter
- 3 tablespoons chicken optional, cooked, finely chopped
Instructions
- Combine all ingredients except butter and chicken in a cold saucepan and whisk well.
- Place over medium heat and continue whisking until thickened.
- Remove from heat and stir in butter. Season with salt & pepper to taste and stir in minced chicken if using.
- Store in the fridge for up to 5 days.
Notes
- Use evaporated milk for a creamier texture; regular milk can be substituted but may yield a thinner soup.
- Store refrigerated for up to 5 days and avoid freezing to preserve consistency.
- If using in a slow cooker, prefer evaporated milk to prevent curdling and consider adding extra broth or water to thin if needed.
- This recipe yields the equivalent of two standard cans of condensed cream of chicken soup.
