Confetti Crumbs

Confetti Crumbs are a streusel-like topping made by creaming butter and sugars, then combining with cake flour, baking powder, and salt to form a dry mixture. Adding colorful sprinkles creates festive clusters ranging from large to small, baked gently at a low temperature. These crumbs firm up upon cooling and can be scattered over cakes, cupcakes, or eaten alone for a sweet, crunchy texture.

Description

The recipe starts by creaming softened unsalted butter with granulated and light brown sugar along with vanilla extract until pale and fluffy. Separately, a dry mix of cake flour, baking powder, and salt is whisked together.

The dry ingredients are gradually mixed into the butter mixture on medium-low speed to prevent overworking; the combined dough remains dry and sandy but will clump when pinched. Sprinkles are folded in, and the dough is shaped by hand into clusters resembling streusel of varied sizes.

The clusters are spread evenly on a parchment-lined baking sheet and baked at a low temperature (315°F) for 10–12 minutes to set without browning excessively. Cooling hardens the crumbs to a firm, crunchy texture suitable for sprinkling onto desserts or enjoying as a snack.

  • 5 Tablespoons butter softened, unsalted
  • cup granulated sugar
  • 2 Tablespoons light brown sugar firmly packed
  • 2 teaspoons vanilla extract
  • 1 ⅓ cups cake flour
  • ¼ teaspoon baking powder
  • heaping teaspoon table salt
  • 3 Tablespoons Sprinkles I like to use a mix of nonpareils and jimmies but one or the other would work fine

Instructions

  1. Preheat oven to 315F and line a baking sheet with parchment paper.
  2. Cream together butter, sugars, and vanilla extract until light and thoroughly creamed.
  3. Separately, whisk together flour, baking powder, and salt.
  4. With electric mixer on medium-low, gradually add flour mixture to butter mixture until combined. Mixture will be very dry and sandy, but if you pinch it with your fingers it should cling together.
  5. Add sprinkles, then use your hands to incorporate the sprinkles and to pinch together the dough, creating clusters. I usually create large clusters that I break into smaller pieces. Ultimately it should resemble streusel with varying sizes of clumps when you’re finished.
  6. Spread evenly onto prepared baking sheet and bake on 315F (155C) for 10-12 minutes. Allow to cool completely on baking sheet. The crumbs will be soft while warm, but will become firm once they’ve cooled completely.
  7. Use as desired over cakes, cupcakes, cookies, or even just enjoy by the handful.
