Consomé
Description
Consomé is prepared by cooking a mixture of Roma tomatoes, onion, garlic, and dried chile guajillo in broth along with oregano, salt, and pepper. The ingredients are cooked briefly to meld flavors, then the chiles are pureed with some broth and strained to remove pulp. The remaining vegetables are also pureed and blended with the strained chile mixture, creating a slightly thick sauce with optional texture depending on preference.
This sauce is reheated gently with oil to avoid splattering and simmered until it thickens slightly, concentrating its flavors. The result is a fragrant sauce balancing the acid of tomato with mild heat and aromatic herbs, suitable as a topping for various Mexican-style fried corn-based dishes.
Substitutions for chile guajillo include chile varieties such as New Mexico, Ancho, Pasilla, or Puya peppers. Texture preferences can be adjusted by blending more or less finely, allowing for some chunks or a smoother finish to accommodate personal taste.
Ingredients
- 3 Roma tomato
- ¼ onion white or yellow, large
- 1 large garlic or two small cloves, peeled, clove
- 2 chile guajillo cleaned and seeded, see substitutes below
- 2 cups broth Beef, chicken or vegetable
- ½ teaspoon dried oregano each
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a small to medium saucepan, add all of the ingredients and cook for 15 minutes over medium heat.
- Puree: Add the guajillos to a blender with 1 cup of the broth. Puree well.
- Using a fine strainer, strain the guajillos to remove all of the pulp.
- In same blender, add the rest of the vegetables and the remainder of the cooked water. Puree well. See note #1
- In a medium saucepan, heat 1 tablespoon of oil and add the sauces very carefully & slowly to make sure it doesn't splatter all over the stove!
- Cook on low heat for about 10 to 15 minutes until all of the flavors have incorporated well and the sauce thickens up a little bit.
- Taste for salt & pepper and add more if needed according to taste.
- Drizzle hot over tacos dorados, sopes, gorditas, tostadas, etc.
Notes
- Puree tomatoes and other vegetables to desired texture for smooth or slightly chunky consomé.
- Chile guajillos can be substituted with New Mexico, Ancho, Pasilla, or Puya peppers if unavailable.
