Cool Whip Cookies

Cool Whip Cookies use lemon cake mix combined with whipped topping and an egg to create a soft, tender cookie with a bright lemon flavor and light texture. Rolling the dough balls in powdered sugar adds a sweet, lightly crisp exterior. Baking them just until set keeps the centers soft and delicate, making them a nice treat when a moist, cake-like cookie is desired.

Description

This recipe blends lemon cake mix with thawed Cool Whip and a single egg, yielding a dough that's easy to handle and rich in lemon flavor without extra vanilla or additions. Rolling the dough balls in powdered sugar creates a subtle crust that enhances texture contrast. Baking at 350°F for 8-10 minutes until the cookies are set but not browned preserves their softness and prevents dryness.

The result is a batch of about 20 cookies with a light crumb and gentle sweetness, showcasing the cake mix's lemony notes. These cookies make for a convenient dessert when you want moist, tender treats without the crumbly texture of traditional cookies.

Because the cake mix carries much of the flavor, no additional extracts are necessary. Cooling the cookies completely before storing helps maintain their texture.
