Copycat In-N-Out Burger
Description
The recipe starts with forming 80/20 ground beef into balls, then crushing them thinly on a hot oiled skillet or griddle to achieve the signature thin, caramelized patties. Seasoned simply with salt and pepper, the patties cook briefly to preserve juiciness and develop flavorful crusts. Two slices of American cheese are melted on each patty near the end of cooking.
The burger is assembled on toasted hamburger buns with a spread of the special sauce made by combining mayonnaise, ketchup, pickle relish, and white vinegar, which provides a mildly tangy, creamy contrast. Fresh tomato slices, crisp iceberg lettuce, and raw onion slices add crunch and freshness to balance the meat.
These burgers are best eaten fresh due to the thin patties and melted cheese but can be stored refrigerated for up to a week for the cooked patties. The method honors the simplicity and signature texture known from the fast-food chain.
Ingredients
FOR THE BURGER:
- 1 pound ground beef 80/20 (lean to fat ratio
- 2 tsp olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 8 lices American cheese
- 1 tomato sliced, large
- 8 iceberg lettuce leaves
- 1 white onion sliced
- 4 Hamburger Bun
FOR THE SAUCE:
- ¼ cup mayonnaise
- 2 Tablespoons ketchup
- 1 Tablespoon pickle relish sweet
- 1 Tablespoon white vinegar
Instructions
- Form the ground beef into 4 balls approximately ¼ pound each.
- Mix the sauce ingredients together in a small bowl.
- Preheat in a large skillet, cast iron skillet or griddle over medium high heat. Drizzle the olive oil on the pan.
- Place the buns on the preheated pan for 2 minutes to toast them and then set them aside while you prepare the beef.
- Then place the beef balls on the pan. Then top each one with a piece on parchment paper and firmly press down to smash the beef into a thin patty with either a burger press or a large spatula and then discard the parchment paper. Season the patties with salt and pepper.
- Cook the patties for 2 minutes until the juices in the beef start to raise to the top and the color starts to change. Then scrape under the patty to get under the caramelized parts and flip the patty. Once flipped, do not smash down the patties again. Cook for 1 more minute and place 2 pieces of cheese on each of the patties. Cook for 1 more minute to allow the cheese to melt.
- Then it’s time to assemble your burgers. Spread the sauce on the bottom of the bun. Then top it with the lettuce, tomatoes, patty and onions.
- Then the burgers are ready to enjoy!
Notes
- Best served fresh but leftover patties can be refrigerated in an airtight container for up to one week.
