Copycat Jiffy Corn Bread Muffin Mix

This Copycat Jiffy Corn Bread Muffin Mix is a homemade blend of flour, yellow cornmeal, sugar, baking powder, and salt that mimics a popular store-bought mix. It serves as a base for quick muffins or bread when combined with wet ingredients, offering a versatile starting point for classic cornbread flavors with optional additions like cheese or peppers.

Description

This mix combines all-purpose flour and yellow cornmeal for a slightly coarse texture characteristic of cornbread. Sugar and baking powder provide sweetness and leavening, while salt balances the flavor. The dry mix can be stored in an airtight container for later use.

To make muffins, the mix is combined with vegetable oil or melted butter, milk, and egg to create a batter. Variations can include add-ins like shredded cheese, corn, chiles, jalapenos, bacon, or tomatoes to customize flavor and texture.

Baked in lined muffin tins at 400 degrees for 15-20 minutes, the muffins develop golden tops and tender crumb. For loaf pans, the batter is divided and baked slightly longer. Covering with foil if browning too fast helps prevent burning. This mix offers an easy way to prepare cornbread items with pantry ingredients.
