Copycat Starbucks Egg Bites

  • 8 large egg
  • 1 cup cottage cheese
  • ¾ cup cheddar cheese shredded sharp
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup bacon bits or finely diced ham
  • 2 tablespoons red bell pepper finely diced
  • 1 tablespoon chives or thinly sliced green onion, chopped fresh

Instructions

  1. Preheat the oven to 325°F. Grease a silicone muffin pan or line a regular muffin pan with parchment liners.
  2. In a blender, combine eggs, cottage cheese, cheddar cheese, salt and pepper. Blend until smooth, about 40 seconds.
  3. Place the muffin pan into a 9x13 baking pan or large rimmed baking sheet.
  4. Divide the bacon, bell pepper, and chives over each muffin well. Pour the egg mixture into each well.
  5. Pour hot water into the pan around the muffin pans.
  6. Bake for 35 to 40 minutes or until the eggs are set. Cool completely.

Notes

  • You can bake these muffins without the water, the texture will change slightly. If you aren't using a water bath, bake for 20 to 24 minutes or until set.
  • Leftovers will keep in an airtight container in the refrigerator for 4 days or in the freezer for 3 months.
