Copycat Taco Bell Mexican Pizza
Description
This Copycat Taco Bell Mexican Pizza starts with tortillas coated on the bottom with refried beans, followed by a savory, spiced ground beef mixture that includes oats to bind and add texture. Another tortilla tops the filling, creating a layered base.
On top, an enchilada sauce made from canned sauce, sugar, onion powder, and green chili juice lends a mild heat and tangy flavor. Diced fresh tomatoes add a juicy, bright contrast, and a mixture of cheddar, mozzarella, and Monterey Jack cheeses melts over the surface to achieve a creamy, rich topping.
Baked at 350°F until the cheese is melted and slightly bubbly, the Mexican Pizza combines textures from crispy warmed tortillas to gooey melted cheese and tender fillings. It can be served as a main dish, ideal for recreating a familiar fast-food favorite at home.
A tip for crisper tortillas is to lightly fry them in oil or bake them briefly before assembling. Using Taco Bell's branded refried beans can enhance authenticity.
Ingredients
- 8 tortilla 6-inch

- ¼ cup water
- 1 Tablespoon cornstarch
Enchilada Sauce

- Remove from heat and set aside.
- Spread the refried beans across the top of 4 tortillas, then top with the beef mixture and another tortilla.
- Combine the enchilada sauce ingredients and spread on the top of each of the 4 tortillas. Top each with diced tomatoes and then with the 3-cheese blend.
- Bake for 10-15 minutes, until the cheese is melted. Serve and enjoy!
Notes
- For crispier tortillas, lightly fry them in vegetable oil before assembling or bake them for about 5 minutes in the oven.
- Using Taco Bell brand refried beans helps replicate the authentic flavor of the original Mexican Pizza.
