  • 8 tortilla 6-inch
  • 1/2 lb. ground beef 80 or 85%
  • 1/4 cup old-fashioned oats
  • 1 tomato diced, large
  • 3/4 cup refried beans see notes

Beef Seasoning

  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 1 ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cocoa powder
  • ¼ cup water
  • 1 Tablespoon cornstarch

Enchilada Sauce

  • 1/2 cup enchilada sauce
  • ½ teaspoon sugar
  • ½ teaspoon onion powder
  • 1 teaspoon green chili juice from diced

Cheese

  • 1/2 cup cheddar cheese grated
  • 1/2 cup mozzarella cheese grated
  • 1/2 cup Monterey jack cheese grated

Instructions

  1. Preheat oven to 350 degrees.
  2. Brown the beef in a pan over medium heat and drain any excess grease.
  3. Add the oats and beef seasonings (except for the corn starch), and stir to combine. Heat until the water has reduced by half, about 5 minutes. Mix in the cornstarch and heat until thickened, about 3-4 minutes.
  4. Remove from heat and set aside.
  5. Spread the refried beans across the top of 4 tortillas, then top with the beef mixture and another tortilla.
  6. Combine the enchilada sauce ingredients and spread on the top of each of the 4 tortillas. Top each with diced tomatoes and then with the 3-cheese blend.
  7. Bake for 10-15 minutes, until the cheese is melted. Serve and enjoy!

Notes

  • For crispier tortillas, lightly fry them in vegetable oil before assembling or bake them for about 5 minutes in the oven.
  • Using Taco Bell brand refried beans helps replicate the authentic flavor of the original Mexican Pizza.
