Corn Casserole
Description
This Corn Casserole recipe features a mixture of canned creamed and whole corn, combined with crushed soda crackers, milk, sugar, eggs, flour, and melted butter or bacon grease. The ingredients are mixed into a batter poured into a greased baking dish and then baked at 350°F until set and golden on top.
The final texture can vary based on baking time: a shorter bake results in a softer, more pudding-like consistency, while a longer bake yields a breadier, cornbread-like texture. The corn's natural sweetness is balanced with sugar and the buttery crust from the crackers adds subtle flavor and structure.
This casserole compliments a variety of meals and can be served as a warm side dish. It is suitable for holiday dinners or everyday meals. Additionally, the recipe encourages variations by including ingredients like bacon, jalapeños, onions, green chilies, cheese, or sour cream to customize flavor and texture.
The dish freezes well if stored in an airtight, freezer-safe container. Thawing overnight in the refrigerator before reheating in the oven preserves quality. Monitoring bake time is key to achieving the preferred texture.
Ingredients
- 2 ounce cans creamed corn
- 1 ounce can corn drained, whole
- 1 cup soda cracker crushed, or saltine crackers
- 1/2 cup milk
- 1/2 cup sugar
- 3 egg

- Pour mixture into a greased 9x13 glass baking dish.
- Bake for 1 - 1 1/2 hours or until cooked through and golden brown on top.

Notes
- Adjust baking time to achieve desired texture: bake longer for breadier casserole or less for pudding-like consistency.

- Mix-ins such as crumbled bacon, jalapeños, onions, green chilies, shredded cheese, or sour cream can be added to alter flavor and texture.
