Corn Casserole
Description
Corn Casserole is prepared by combining sour cream, eggs, and melted butter, then adding drained whole kernel corn, creamed corn, and cornbread mix. Seasoned lightly with salt and pepper, the mixture is poured into a baking dish and baked until golden on top and at the edges with a tender interior that jiggles slightly when the dish is moved gently.
The resulting casserole offers a moist, tender texture and a balanced corn flavor combining the sweetness of creamed corn with the tender kernels. It can be enjoyed warm as a side dish alongside a variety of main courses, particularly in comfort food or holiday menus.
The recipe suggests bringing ingredients to room temperature before mixing to ensure a smooth batter and consistent bake. Variations include sautéing aromatics like onion and garlic for added flavor, adding sugar to increase sweetness, or folding in shredded cheese for a creamier texture and richer taste.
Ingredients
- 1 (8-ounce) box cornbread mix (like Jiffy Corn Muffin Mix)
- 1 (15-ounce) can corn drained, whole kernel
- 1 (15-ounce) can creamed corn
- 2 large egg
- 1 cup sour cream (120g)
- ½ cup butter melted, unsalted
- salt to taste
- black pepper to taste
Instructions
- Preheat the oven to 350°F. Lightly grease an 8x8-inch baking dish.
- In a large mixing bowl, combine the sour cream, egg, and melted butter, and whisk until well combined. Add the corn, creamed corn, cornbread mix, ¼ teaspoon of salt, and black pepper to taste. (Use more or less salt to taste depending on the salt levels in your canned corn.) Stir together until well combined and pour into the prepared casserole dish.
- Bake for 40 to 45 minutes or until the top and edges are golden brown, and the center is only slightly jiggly when gently shaken. Let cool for a few minutes before serving warm.
Notes
- Allow eggs and sour cream to come to room temperature before starting; this helps create a creamy, well-incorporated batter.
- Sauté diced onion, minced garlic, and fresh thyme in butter and add them to the batter for additional flavor depth.
- Add two tablespoons of granulated sugar into the batter for a sweeter casserole variation.
- Incorporate a cup of shredded cheese like gruyere, Swiss, or cheddar for extra creaminess and comfort.
