Description

The recipe begins by preparing turnip greens and reserving their cooking broth, often called "pot likker." This dough is shaped into roll-like forms and simmered in the turnip greens broth for about 30 minutes, turning occasionally to cook evenly.

  • 1 cup white cornmeal plain, finely ground
  • 1 teaspoon salt
  • ¼ teaspoon black pepper ground
  • 2 tablespoons green onion finely chopped
  • 4 cups turnip greens broth (may use more broth)

Instructions

  1. Cook turnip greens following your usual recipe or use mine (linked here). About 45 minutes before serving, make the corn dodgers.
  2. Mix the cornmeal, salt, pepper, and onion in a medium bowl. Add broth starting with about 3/4 cup to make a stiff dough.
  3. Shape the dough into rolls about twice as long as wide.
  4. From the turnips, remove 3 cups of broth and place in a medium saucepan. Bring to a boil over medium high heat. Drop in the dodgers and lower the heat to a simmer. Cook slowly until done through, about 30 minutes, turning the dodgers over a few times.
  5. Serve with turnip greens and additional “pot likker.”

Notes

  • "Pot likker" is the seasoning broth from cooking turnip greens; it should be saved and used for simmering corn dodgers.
  • Leftover greens and broth can be refrigerated in a tightly sealed container for up to 4 days.
  • Reheat corn dodgers gently in the pot likker over low heat to keep them moist and flavorful.
