Corn Fritters with Cilantro
Description
This recipe combines sautéed onion and ginger softened in oil with a batter made by blending some corn kernels with self-raising flour, eggs, cumin, and water. The remaining corn, chopped spring onions, chili, and fresh coriander leaves and stems are stirred in, then seasoned with sea salt and black pepper. Small portions of the batter are fried in oil over high heat until golden on both sides, then transferred to an oven set at 180°C (350°F) for a few minutes to finish cooking through.
The method yields fritters with crunchy exteriors and moist, flavorful interiors showing bursts of corn and fragrant cilantro. The spices, including cumin and chili, add warmth and subtle heat, balanced by the freshness of cilantro and ginger.

Ingredients
- 1 1/2 cups corn kernels
- 2 spring onions
- 1/2 onion
- 1 ginger knob
- bunch cilantro aka coriander, leaves and stalks
- chili medium
- 1 tablespoon cumin dried
- 1/2 cup water
- 2 egg
- 1 cup self-raising flour
- sea salt flakes
- black pepper in grinder
- olive oil
Instructions
- Preheat oven to 180 ℃ (350 ℉).
- Saute the onion and ginger in a little oil until soft and translucent.
- Place the flour, 1 cup (150 g) of the corn kernels, onion, ginger, cumin, water and eggs into a food processor and process until well combined.
- Place mixture into a large mixing bowl and stir through the remaining corn, shallots, chilli, and coriander and season the mixture with sea salt and black pepper.
- In a non-stick fry pan place a little oil and set over high heat.
- Using a 30 ml (1 oz) ladle cook fritters 2 at a time, approx 1 minute per side or until golden.
- Transfer to an oven proof rack and tray and cook for a further 3-4 minutes in the oven.
