Description
This recipe begins by mixing chili powder, salt, and black pepper as the seasoning blend. Corn ears are rubbed with vegetable oil and half the seasoning, then wrapped in three slices of bacon each with some overlap. The wrapped corn is placed on foil, seasoned again on the outside, and drizzled evenly with honey before tightly wrapping the foil around each ear.
Baking at 425°F for 25-30 minutes, flipping halfway through, crisps the bacon while fully cooking the corn inside. The bacon's fat renders to infuse the corn with smoky flavor and the honey adds sweetness and caramelization. Once cooled slightly and unwrapped, each serving offers a balance of smoky bacon texture and sweet, tender corn kernels.

Ingredients
- 4 corn shucked, ears
- 12 lices Bacon
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup honey
- 2 Tbsp vegetable oil
Instructions
- Preheat the oven to 425 degrees F. Mix together the chili powder, salt and pepper together in a small bowl.
- Rub the vegetable oil on the ears of the corn and season the corn with the half of the seasoning mixture. Then wrap each of the corn with the bacon overlapping the bacon slightly (3 slices of bacon per ear of corn).
- Then place each piece of corn on a piece of foil. Season the outside of the bacon on the corn with the remaining seasoning mixture and drizzle the honey evenly on top. Use a basting brush to make sure that the honey is spread evenly on the bacon. Wrap the foil around the corn and secure the end of the foil.
- Place the corn on a baking sheet and place in the oven. Cook for 25-30 minutes (flipping the corn halfway through the cook time) until the bacon is crispy and the corn is cooked thorough.
- Let the corn rest to cool slightly. Then carefully unwrap the foil from the corn and serve immediately while warm. Enjoy!
Notes
- Maple syrup can be used as a substitute for honey to provide a different sweet flavor.
- The wrapped corn is best served immediately while the bacon remains crispy.
- Leftovers can be refrigerated in an airtight container for up to 5 days, though the bacon texture will soften upon storage.
