Ingredients

  • 5 egg lightly beaten, large
  • 8 tablespoons butter , melted and slightly cooled
  • 4 tablespoons sugar
  • ¼ cup sour cream
  • 1 tablespoon onion powder
  • ½ cup milk whole
  • 3 tablespoons cornstarch
  • 16 oz. corn drained net weight, canned, whole grain, yellow
  • 26 oz. creamed corn
  • 2 tablespoons chives finely chopped
  • butter , for the mold
  • salt
  • black pepper , freshly ground (or cayenne pepper)

Equipment

  • Cast iron pan , 2 quarts / 2 liters

Instructions

  1. Preheat the oven to 390 F (200°C).
  2. Butter a cast iron pan.
  3. Pour the eggs into a mixing bowl.
  4. Add the milk, melted butter, sugar, onion powder and cornstarch.
  5. Whisk well until combined.
  6. Stir in the drained corn and creamed corn. Season with salt and pepper.
  7. Whisk until well combined.
  8. Pour the mixture into the previously buttered casserole dish.
  9. Bake for about an hour or until the corn pudding is golden brown.
  10. Remove from the oven, sprinkle the entire surface of the corn pudding with chives.
