Description
This recipe transforms whole corn cobs into ribs by slicing the corn into manageable quarters and then halving those for twelve segments. These pieces are coated generously with a butter and cilantro mixture, providing rich, herbaceous notes. Air frying at 400°F carefully cooks the corn ribs until they curl and develop lightly charred, crisp edges while remaining juicy inside. The technique enhances the natural sweetness and provides a satisfying texture that is more substantial and easier to eat compared with whole corn on the cob.
The result is a hands-on snack or side dish with a buttery, slightly smoky flavor profile accented by fresh cilantro. A final sprinkling of sea salt and extra cilantro adds bright contrast and helps balance the richness of the butter.
Leftovers can be stored in the fridge for a few days and reheated briefly in the air fryer or oven to regain crispness. Serving immediately ensures the best texture and flavor.
Ingredients
- 3 corn husks removed, on the cob
- ½ cup salted butter room temperature, Danish Creamery brand
- 3-4 tablespoons cilantro plus more for serving, chopped
- salt for serving, sea salt
Instructions
- Stand the corn vertically on a cutting board. Place the knife firmly at the top of the corn right in the middle and push the knife downwards carefully, rowing it back and forth if needed. The shorter and wider the corn is, the easier it will be.
- Hold the two halves together and cut them in half again vertically to create quarters.
- Combine the butter and cilantro to create the herbed butter. Brush the herbed butter all over the 12 pieces of corn ribs.
- Place the corn ribs in the preheated air fryer in a single layer, leaving space between each of them to allow for air flow
- Air fry at 400ºF until the corn ribs start to curl and become charred, 10-15 minutes.
- Serve with sprinkling of sea salt and fresh cilantro, if desired.
Notes
- Corn ribs are best served immediately after air frying for the best texture and flavor.
- Store leftovers covered in the refrigerator for 2–3 days, and reheat in an air fryer at 360°F for a few minutes or in the oven around 375°F for about 8 minutes to crisp them up again.
