For the Salad:

  • 3 cups corn kernels 4 Corn on the Cobs
  • 1 cup cherry tomato quartered
  • 1 cucumber peeled and diced, small
  • 1/2 red onion diced
  • 2 Tablespoons basil chopped, fresh
  • 1 Tablespoon parsley chopped, fresh
  • 1/4 cup feta cheese crumbled

For the Dressing:

  • 1/4 cup olive oil
  • 2 Tablespoons red wine vinegar
  • 1 lemon juiced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Whisk together the dressing ingredients in a small mixing bowl.  Refrigerate while you prepare the salt ingredients.
  2. Boil the corn in a large pot of water for approximately 3 minutes.  Once the corn has cooled, remove the kernels from the corn.  Place the kernels in a large bowl.
  3. Stir in the remaining salad ingredients.
  4. Pour the dressing mixture over the salad.  Gently toss the ingredients to coat with the dressing.
  5. Serve cold and enjoy!

Notes

  • Consume the salad within two hours after adding the dressing to maintain crispness and freshness.
