The kernels are cut off the cob and mixed with minced red onion, diced red bell pepper, chopped cilantro, and minced jalapeño with seeds and ribs removed for mild heat.

Lime juice adds acidity to brighten the salsa, while salt balances the flavors. The salsa is stirred gently to maintain the fresh textures of each component, resulting in a crisp, vibrant mix.

This salsa can be served immediately for maximum freshness or refrigerated for up to one day to allow flavors to meld. Removing jalapeño seeds and ribs keeps the heat low, but leaving them in can add spiciness according to taste.

  • 5 ears corn OR 3 cups frozen corn kernels, thawed, fresh
  • 1/3 cup red onion minced
  • 2 tablespoons jalapeño seeds and ribs removed, then minced
  • 1 red bell pepper cored, seeded and finely diced
  • 1/2 cup cilantro chopped
  • 2 tablespoons lime juice
  • salt to taste

Instructions

  1. If using fresh corn, shuck the corn. Preheat a grill or grill pan to medium high heat. Place the corn on the grill and cook for 2-3 minutes per side until corn is tender and charred. Use a sharp knife to cut the kernels off the cob.
  2. If you're using frozen corn, skip the grilling step.
  3. Place the corn, red onion, jalapeno, red bell pepper, cilantro, lime juice and salt in a large bowl.
  4. Stir gently to combine.
  5. Serve immediately or cover and refrigerate for up to 1 day before serving.

Notes

  • Using fresh grilled corn adds smoky flavor, but steamed fresh or thawed frozen corn work well as alternatives.
  • Removing jalapeño seeds and ribs makes the salsa mild; keep some in for more heat if preferred.
