Corn Tomato Avocado Salad makes the ideal summer side dish to take advantage of the fresh garden produce. Serve with tortilla chips as a dip, too!

Ingredients
- 2 cups Roma tomato chopped
- 1 cup onion red, chopped
- 1 jalapeno pepper chopped, small
- 1/4 cup poblano pepper chopped
- 1 1/2 cup corn cut off the cob, fresh
- 1/4 cup cilantro chopped, fresh
- 2 teaspoons garlic minced
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup lime juice
- 1 avocado cut into small pieces
Instructions
- Combine all of the ingredients together in a bowl and stir gently to combine.
- Serve immediately.
- Store any leftovers in an airtight container in the refrigerator.
Notes
- *You can prepare this salad ahead of time. If you'd like to do this, wait until just before serving to add the avocado. *If you don't have fresh corn, you can use frozen corn. Just thaw and add it to the mix.
