  • cup cornmeal yellow
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup butter melted
  • 2 egg
  • 14-15 ounces creamed corn 1 can
  • 1 cup sour cream
  • 1 cup cheddar cheese optional, shredded sharp
  • 15 ounces corn drained, optional, canned

Instructions

  1. Preheat oven to 350°F. Grease a 9x13 baking pan and set aside.
  2. Combine flour, cornmeal, sugar, baking powder and salt.
  3. In a separate dish, combine butter, eggs, creamed corn and sour cream.
  4. Mix wet and dry ingredients just until combined. Fold in cheese and corn kernels if using.
  5. Spread into prepared dish and bake 45-55 minutes or until lightly browned.

Notes

  • Replace canned corn with 1 1/2 cups thawed frozen corn if preferred.
