Cornbread Muffins

Report
Cornbread Muffins made from a mix of all-purpose flour, yellow cornmeal, sugar, and baking powder yield tender, lightly sweet muffins with a golden crust. The straightforward recipe includes basic pantry ingredients with egg, milk, and vegetable oil for moist texture. These muffins bake quickly, making them a practical side or snack to accompany savory dishes.

Description

This Cornbread Muffins recipe combines equal parts flour and cornmeal alongside sugar, salt, and baking powder to create a balanced dry mix. An egg, milk, and vegetable oil provide richness and moisture, blending into a batter that is poured into a greased muffin tin. Baking at 400 degrees results in muffins that rise nicely and develop a slightly crisp exterior while staying soft inside.

The muffins pair well with soups, chilies, barbecue dishes, or can be enjoyed alone with butter. Their slightly sweet profile can complement both savory and sweet accompaniments. The recipe is easy to put together and requires minimal ingredients, making it an affordable option for home cooks.

Spraying the muffin tins with nonstick spray ensures easy removal. Cooling the muffins before cutting helps them hold shape. The recipe yields about a dozen muffins, suitable for sharing or storing for a few days.
