Corned Beef Sandwich
Description
This sandwich features thinly sliced corned beef and Swiss cheese placed on rye or dark pumpernickel bread. The layered sandwich is briefly broiled until the cheese softens and just begins to melt, enhancing the rich texture. Adding coleslaw and sliced pickles introduces a crunchy, slightly tangy counterpoint.
Russian dressing spread on the opposite slice of bread adds a creamy, mildly spiced flavor, completing the sandwich. For a warm version, the sandwich can be buttered on the outside and grilled in a skillet until golden brown and crisp, melding the flavors and crispness.
The combination of salty corned beef, melting cheese, creamy dressing, and crunchy, pickled vegetables creates a well-balanced sandwich providing multiple textures and flavors within a simple assembly.
Ingredients
- 8 lices rye bread or black pumpernickel, dark
- ½ pound corned beef sliced
- 4 lices swiss cheese
- 1 cup coleslaw (click the link for our homemade coleslaw)
- 6 pickles sliced
- ½ cup Russian dressing (click the link for our homemade Russian dressing)
Instructions
- On one slice of bread, layer the corned beef and top with cheese. Place under the broiler in the oven until cheese just starts to melt.
- Remove from oven and top the cheese with coleslaw and sliced pickles. Spread Russian dressing over the other slice of bread.
- Put the two slices together and enjoy!
- Optional: To serve grilled, make a sandwich and butter outside slices of bread. Place in a skillet at medium heat to medium-high heat. Grill until the bread is golden brown on both sides.
